Earthing

Earth can be  regarded as a large reservoir of oppositely charged particle, electrons and protons. Earth on a whole is electrically neutral. By any means , if we take out or add some electrons to the earth. its charge will remain almost zero.Thus the earth is regarded as large capacitor with zero potential under all practical conditions. Any body connected to earth becomes its part and hence has zero potential.  

Earthing: When a body comes in contact with the earth, either directly or indirectly, then the charges are discharged to the earth. This is called earthing. The process of transfer of charges from a charged object to the earth is called earthing or grounding.

When a positively charged body is connected to the earth, the electrons start flowing from the earth till the positive charge of the body becomes zero, and hence potential of  the body V becomes zero.

When a negatively charged body is connected to earth, the electrons from the body start flowing to the earth, till the body becomes neutral and hence its potential becomes zero.
